    Pierce the eggplant with a fork. Roast over an open flame until charred. Transfer into a bowl and cover for 5mins to steam. Peel off charred skin. Cut eggplant into 1-inch pieces.

    Sauté garlic, onion and tomato in oil for 2mins. Add eggplant and cook for another 3mins. Season with ½ sachet of MAGGI® Magic Sarap®.

    Beat eggs and season with remaining ½ sachet of MAGGI® Magic Sarap®. Pour into the pan and cook until set. Transfer on a serving plate and serve.
