1 Sauté garlic in oil. Add papaya and monggo. Sauté for 2 minutes. Add MAGGI MAGIC SARAP®. Transfer into a large plate or a tray to cool. Mix in egg whites.
2. To assemble, lay lumpia wrapper flat and place 3 tbsp of the vegetable mixture. Add 2 tbsp of the ground longganisa. Make a well and carefully nest the egg yolk in the middle.
3. Spread the flour and water mixture on the side and carefully fold making a half circle. Seal the sides tightly.
4. Deep fry for 3-4 minutes or until golden brown over medium heat. Assemble and cook the rest of the empanada.
5. Drain excess oil in a rack or paper towels. Serve warm with preferred spiced vinegar.
Vigan longganisa is the Filipino version of chorizo or meat sausage usually served for breakfast. Rendered on its own fat, they burst with garlicky , spicy, salty and tangy flavors.

3 tbsp vegetable oil
2 cloves garlic, minced
1 pc medium green papaya, grated
1/4 cup monggo, cooked until tender and drained
1 sachet MAGGI MAGIC SARAP®
6 pcs small eggs, separate yolk from the white
6 pcs small lumpia wrapper
1/4 kg Vigan longganisa, removed from casing and sauteed until ground and golden brown
1 tbsp all-purpose flour, mixed with 3 tbsp water
2 liters vegetable oil for deep frying
