Chicken Curry

This mildly spicy Asian-inspired dish is a great way to spruce up a boring meal.

INGREDIENTS

1 kg boneless chicken thigh, cut into 2-inch pieces
3 sachets MAGGI MAGIC CHICKEN®
1 head garlic, minced
1 pc onion, minced
1 tbsp curry powder
1/4 tsp freshly ground black pepper
2 pcs bay leaves
1 pc medium red bell pepper, medium diced
1 pc medium green bell pepper, medium diced
1/2 cup coconut cream
1/4 cup vegetable oil
1 pc large potato, cut into 1-inch pieces
1 pc large carrot, cut into 1-inch pieces
2 cups water

Directions

1. Sauté potato and carrot in oil until light golden brown.

2. Season chicken with 2 sachets of MAGGI MAGIC Chicken and sear in the same pan until light golden brown. Set aside.

3. Sauté garlic and onion in the same pan. Add bell peppers and sauté for 5 minutes. Add curry powder, seared chicken, pepper and bay leaves. Pour water and simmer for 15 minutes.

4. Add sautéed potato, carrot and coconut cream and continue to simmer for 15 minutes. Let the  sauce reduce. Season with remaining sachet of MAGGI MAGIC Chicken. Transfer into a serving bowl and serve.
