Kids are going to love these crunchy croquettes made with healthy sweet potatoes and flavorful longganisa! Warning: may be addictive.
1. Place sweet potatoes in a pot and cover with water. Bring to simmer and cook until tender. Drain, cool, peel, and mash or grate.
2. Combine mashed sweet potato with longganisa, butter, and evaporated milk. Season with 8g MAGGI MAGIC SARAP®. Place in the refrigerator for at least 15 minutes.
3. Shape mixture into balls, about the size of golf balls. Coat with breadcrumbs, dip in egg, and coat again with breadcrumbs. Assemble the rest of the croquettes and set aside.
4. Preheat oil over medium-high heat and deep-fry croquettes until golden brown. Strain and drain excess oil. Transfer into the serving plate and serve with tomato catsup.
Lucban Longganisa is a famous native delicacy that has a strong garlic flavor and is a bit sour. Best eaten with fried rice and egg with vinegar on the side. Sweet potatoes are rich in vitamin A for good eyesight and Potassium for electrolyte and water balance.

1 cup crumbled Lucban longganisa, sautéed
2 tbsp butter
1 sachet MAGGI MAGIC SARAP®
1/4 tsp fresh ground pepper
2 pcs eggs, beaten
2 cups Japanese breadcrumbs, finely ground vegetable oil for deep frying
