Pinakbet of Central Luzon

High in protein and iron, this dish is sure to keep your family’s tummy filled!

INGREDIENTS

2 tbsp vegetable oil
4 cloves garlic, crushed
1 pc large red onion, large diced
3 pcs tomato, large diced
2 tbsp bagoong alamang
150 g trimmed swahe
3 cups water
1 1/2 cups 1-inch cubed kalabasa
1 cup biased okra
1 cup 2 1/2-inch sitaw
1 cup biased ampalaya, soaked in 1 liter water for 30 mins and drained well
1 cup halved and biased eggplant
1 sachet 8g MAGGI MAGIC SARAP®

Directions

1.Combine oil and garlic and sauté until golden brown. Add onion and tomato and sauté for 2 minutes.

2.Add bagoong alamang and sauté for 1 minute. Make a well and sauté swahe in the middle for 1 minute. Pour water, bring to a boil and simmer for 10 minutes.

3.Add kalabasa and simmer for 2 minutes. Add okra and simmer for 1 minute. Add sitaw and simmer for 1 minute. Add ampalaya and simmer for 1 minute. Add eggplant and simmer for 5 minutes.

4.Season with MAGGI MAGIC SARAP® and simmer for another minute. Transfer into a serving plate and serve.
