Lechon Sinigang

Tired of making lechon paksiw with leftover lechon? Try this creative new recipe for a change.

INGREDIENTS

1 kg leftover lechon, cut into serving pieces
8 cups rice washing
1 pc medium onion, sliced
3 pcs medium tomato, sliced
1 pc medium labanos, sliced on a bias
2 pcs eggplant, sliced on a bias
10 pcs sitaw, cut into 2 ½ inch pieces
2 sachets 22g MAGGI MAGIC SINIGANG®
2 bunch kangkong, leaves and tender stems picked
2 pcs finger chili (siling panigang)

Directions

1. Combine lechon and rice washing. Bring to a boil, skim the scum add onion, tomato and finger chili and simmer for 35-40 minutes to infuse lechon flavor in the broth.

2. Add labanos, eggplant and simmer for 2 minutes. Add sitaw and simmer for another 2 minutes.

3. Add MAGGI® MAGIC SINIGANG Original Sampalok Mix. Bring to simmer. Check seasoning.

 4. Add kangkong and turn off heat.

 5. Serve hot.
