Pork Menudo

The pork and liver in this Menudo recipe, including tomato sauce, make up the protein of this hearty Filipino stew. It’s sure to liven up your meal.

INGREDIENTS

200 g pork shoulder, cut into 1/2-inch pieces
1/2 cup tomato sauce
50 g pork liver, cut into 1/2-inch pieces
2 tbsp vegetable oil
1/2 pc small onion, small diced
1 pc bay leaf
1/2 pc small red bell pepper, medium diced
1/8 tsp freshly ground black pepper
1 sachets MAGGI MAGIC PORK®
4 cloves garlic, minced
1/2 pc small green bell pepper, medium diced
1 pc small potato, large diced
1 pc small carrot, large diced
1 1/4 cups water
1 tbsp brown sugar

Directions

1. Season pork shoulder and pork liver separately with ½ sachet of MAGGI MAGIC Pork and set aside.

2. Sauté potato and carrot in 1 tbsp oil until golden brown. Remove and set aside.

3. Sear pork shoulder and liver separately in the same pan. Remove and set aside.

4. Sauté garlic, onion, red and green bell pepper and bay leaf in remaining 1 tbsp of oil for 5 minutes. Add tomato sauce, water and seared pork. Cover and gently simmer for 45 minutes.

5. Add potato, carrot and seared pork liver. Season with remaining ½ sachet of MAGGI MAGIC Pork, pepper and sugar. Simmer for another 10 minutes. Transfer into a serving plate and serve.

Compared to green peppers, red peppers have more vitamins and nutrients and contain the antioxidant lycopene.The level of carotene, like lycopene, is nine times higher in red peppers. Red peppers have twice the vitamin C content of green peppers.
