Roast Chicken with Oyster Sauce


Put a spin on your usual roast chicken with this recipe that will sure be loved by your family.


1/2 cup water
3 tbsp sliced lemongrass
1/2 cup sliced onion
2 tbsp honey
3 tbsp crushed garlic
1 tsp hot sauce
2 tbsp banana catsup
2 tbsp Chinese wine
1 tbsp sesame oil
6 tbsp MAGGI® Oyster Sauce
2 1/2 sachets MAGGI MAGIC SARAP®
1 pc 1.5kg whole chicken


1.Season chicken with 2 sachets MAGGI MAGIC SARAP® and set aside.

2 Combine 6 tbsp MAGGI® Oyster Sauce, sesame oil, Chinese wine, catsup, hot sauce, garlic and honey. Divide into 2 portions.

3 Use 1 portion to coat chicken well and stuff with garlic, onion and lemongrass. Marinate overnight in the refrigerator.

4 Remove chicken from the refrigerator 1 hour before roasting. Truss with butcher’s twine. Preheat oven at 350?F. Place chicken in a roasting pan and roast for 1 hour and 30 minutes. Baste with the marinade every 15 minutes. Remove from oven and set aside to rest for 30 minutes.

5 While resting remove excess fat from the roasting pan. Deglaze with water and strain into a small sauce pan. Pour reserve 1 portion of the marinade. Season with ½ sachet of MAGGI MAGIC SARAP® and simmer until thick. Strain and pour into a serving bowl.

6 Remove twine from roast chicken and serve with sauce.
