One of the most flavorful Filipino stews, Pork Afritada makes use of chunks of pork shoulder, stewed in tomato sauce
1. Sauté potato and carrot in 1 tbsp oil until golden brown. Remove and set aside.
2. Season pork with 1 sachet of MAGGI MAGIC SARAP®. Sauté separately in 1 tbsp of oil, remove and set aside.
3. Sauté garlic, onion, red and green bell pepper and bay leaf in remaining 1 tbsp of oil for 5 minutes. Add tomato sauce, water and pork. Cover and gently simmer for 1 hour. Add water as needed.
4. Add potato and carrot. Season with remaining sachet of MAGGI MAGIC SARAP®, pepper and sugar. Simmer for another 10 minutes. Transfer into a serving plate and serve.
Tougher cuts of meat such as pork shoulder are suitable for stews and soups. Slow cooking in low fire is most effective in making the meat tender and juicy.

1/2 kg pork shoulder, cut into 2-inch pieces

1 head garlic, minced
1 pc onion, small diced
1 pc small red bell pepper, large diced
1 pc small green bell pepper large diced
1 pc bay leaf
1 cup water
2 cups tomato sauce
1/4 tsp freshly ground pepper
2 tbsp sugar
