Paksiw na Baboy

After a big celebration, what can you do with the leftover lechon? A smart mom knows how to reuse this favorite dish and turn it into Paksiw na Baboy!

INGREDIENTS

2 tbsp vegetable oil
3 pcs saging na saba, peeled and cut into 1-inch pieces
1 kg pork liempo, cut into serving pieces
1/2 cup white vinegar
1 cup water
2 heads garlic, crushed
1/2 cup brown sugar
1/2 cup banana blossoms
1 pc bay leaf
1/4 cup MAGGI®Soy Sauce
1/4 cup MAGGI®Oyster Sauce

Directions

1. Sauté saging na saba in oil until golden brown. Remove and set aside.

2. Combine pork liempo, vinegar, water, garlic, brown sugar, banana blossoms, bay leaf, MAGGI®Soy Sauce and MAGGI® Oyster Sauce in a pot. Cover and simmer for 1 ½ hours.

3. Remove cover and continue to simmer until tender and sauce is reduced. Stir in sautéed saging na saba. Transfer into as serving plate and serve.
