1. Combine bread crumbs and parsley. Season chicken breast with MAGGI MAGIC SARAP® and pepper. Lightly coat with flour, dip in beaten egg and coat with bread crumb mixture. Set aside for 10 minutes.
2. Preheat vegetable oil in a large pan and fry breaded chicken for 2 minutes on each side. Transfer into a cooling rack to drain excess oil.
3. Preheat broiler or an oven on high setting. Place slices of tomato and pesto on top of the chicken. Combine parmesan and mozzarella and place on top of tomato and pesto. Broil for 2 minutes or until golden brown. Serve with pasta.
