Strike a balance between healthy and festive this holiday season with this delectable eggplant recipe!
1. Beat eggs and season with 1/2 sachet of MAGGI MAGIC SARAP. Combine breadcrumbs with parsley. Coat eggplant with flour. Dip in egg and coat with breadcrumb mixture. Set aside.
2. Fry in oil until golden brown.
3. Remove oil from the pan leaving 2 tbsp. Saute garlic and onion. Pour tomato sauce. Season with 1 sachet MAGGI MAGIC SARAP and pepper. Stir in basil and simmer until thick.
4. To assemble, spread tomato sauce on every eggplant and grate cheese on top. Bake in an oven toaster until cheese is golden brown. Transfer on a serving plate and serve.

1/2 sachet MAGGI MAGIC SARAP
1 cup breadcrumbs
3 pcs eggplant, sliced on an angle
3 pcs eggplant, sliced at an angle
1/2 cup all purpose flour
1 cup vegetable oil
4 cloves garlic, minced
1 pc onion, chopped
1 cup tomato sauce
1 sachet MAGGI MAGIC SARAP
1/8 tsp freshly ground pepper
1 tbsp chopped basil
6 tbsp melting cheese, grated
