If the quantities are increased, the cooking time may be extended, so look again. Use water & spices sparingly at first and add more later if needed.
Cut of beef fat from meat of sirloin. Cut beef fat into small pieces and set aside. Cut beef into thin slices across the grain.
Add garlic, ginger MAGGI® Magic Sarap®, pepper sukang Iloko and fish sauce to beef slices. Mix well and set aside.
Sauté beef fat in a pan to start rendering. Strain and set aside as topping.
Strain beef and reserve marinade. Add beef in the same pan with rendered beef fat and cook over high heat for 2mins. Pour reserved marinade and simmer for 2mins.
Add onion, finger chili and scallion. Simmer for another 2mins. Transfer on a serving plate, top with crispy beef fat and serve
