If the quantities are increased, the cooking time may be extended, so look again. Use water & spices sparingly at first and add more later if needed.
Marinate chicken with 2 sachets MAGGI® Magic Sarap®, pepper, thyme, rosemary and olive oil. Refrigerate overnight.
Remove chicken 1hr before cooking. Truss using a butcher’s twine and place in a roasting pan with rack. Roast in a preheated oven for 30mins.
Remove chicken from the pan. Add potato, carrot, garlic, and shallots. Season with 1 sachet of MAGGI® Magic Sarap® and pepper. Coat with the drippings. Place back the rack with the chicken and immediately return to the oven and continue to roast for 45mins.
Remove from the oven and set aside to rest. Cut the chicken into serving pieces. Drizzle drippings on the chicken. Serve with roasted vegetables and lemon wedges.
